The Taste.com Lamington Wreath - using only 6 ingredients!

Christmas is nearly here - and I am just so excited!

Not being the greatest cook, I decided to try my hand at making the taste.com Lamington Wreath, something special to share with you all in the lead up to Christmas. I decided on this recipe as it looked quite easy, and only needed 6 ingredients - winning!

I will start by saying, I used 5 haha! My Woolies order left out frozen strawberries, so I needed to make my own jam using the fresh strawberries. I'd never done this before but was very happy with the results!

What you will need!
500grams of frozen strawberries
2/3 cup of caster sugar
1 tsp vanilla bean paste
2 cups of thickened cream
26 Lamington fingers (I used close to 2 x packs of the Woolies brand)
500grams of small fresh strawberries



How to make it!
Pop the frozen strawberries (in my case the fresh strawberries) and 1/2 cup sugar in a large saucepan over medium heat. As you cook and stir, crush the strawberries, for 10 minutes or until sugar has dissolved. Bring to the boil. Reduce heat to medium-low. Simmer for 10 minutes or until mixture is syrupy.



Step 2
After removing from heat, strain syrup mixture through a fine sieve into a jug - I didn't have a sieve so just tried to drain it best I could . Discard solids. Wash and dry pan. Return syrup to pan. Stir in vanilla bean paste. Bring to a simmer over medium heat. Simmer for 12 minutes or until slightly thickened. Remove from heat. Set aside to cool completely.



Step 3
Using an electric mixer, beat cream and remaining sugar until just-firm peaks form - yum, this was the best part. The cream tasted so good! Add 1/3 cup strawberry syrup to cream. Fold through to create a rippled effect. 

 

Spoon cream mixture into a large snap-lock bag. Snip 2cm off one corner. You could also use a piping bag if you had those handy. Pipe a 23cm ring on a flat serving plate to form the base. You will use this as a guide for placing and securing the lamingtons to the plate.



Step 5
Pipe a little cream mixture onto 1 face of 1 lamington. Place lamington on its side on cream ring to start assembling the wreath. Pipe a little cream onto 1 face of the next lamington. Keep repeating this process with remaining lamingtons and cream mixture to form the wreath.



Step 6
With the fresh strawberries. Hull and finely dice remaining strawberries. Top the wreath with the whole, halved and diced strawberries. Spoon over remaining syrup mixture. Serve immediately.
