Fantale Cookies by Katherine Sabbath
(Bake Australia Great)

So I absolutely adore Katherine Sabbath. Her quirky style and exploding sense of creativity when it comes to cake making and decorating is truely impressive. 

I have made a few things from Katherine's book, Bake Australia Great, with her meringue recipe being one of the best and easiest I have ever tried!

I decided to make the Fantale Cookies because they not only sounded delicious but I LOVE anything with caramel.

The recipe was easy to follow and they turned out great. I also loved that I didn't need to roll out the dough - what a time saver!

Sadly I don't have any photos as I go, but on instagram and TikTok there is my reel or the adventure making them.

What you will need
3/4 cup (180g) unsalted butter, softened 
3/4 cup (165g) caster sugar
1/2 cup (80g) dark brown sugar
1 teaspoon vanilla bean paste
1 egg, chilled
2 1/3 cups (375g) plain flour
1 1/2 teaspoons salt
1 cup (190g) dark chocolate chips
Fantales (you will need 1 per cookie, Katherine's recipe states you will need 20)



How to make it 
Preheat the oven to 160 degrees (320F) fan forced. Line two baking trays with baking paper.

Using an electric mixer fitted with the paddle attachment, beat the butter, caster sugar and brown sugar for 5 minutes or until light and fluffy.

Add the vanilla and egg and beat until well combined.
Add the flour and salt and beat until just combined.
Add the chocolate chips and beat until incorporated.
Refrigerate the cookie dough for at least 30 minutes so that it firms up and is easier to handle.

Roll the dough into balls the size of a golf ball, press one Fantale into the middle of each ball of dough, ensuring it is completely covered.
Place on the trays, leaving 2.5cm (1 inch) clearance around each one.

Working in batches, bake the cookies for 20 minutes or just until golden.
Cool on a wire rake or enjoy warm - delicious!
